As I write this post I am shaking my head at myself....I made the pumpkin pancakes tonight!!!! Had a stack of them plated when my men (husband & son) walked through the door. Smelled amazing! As I was tasting the batter I thought to myself, "WOW, these are really sweet!" When, I had these the other day they were NOT this sweet. I kept cooking....I had to double the recipe so I could feed our whole family plus two guest. Oh boy! Instead of adding 2 1/2 tablespoons of brown sugar, I added 2 1/2 cups. Yep! Super sweet pumpkin pancakes...more like cake! The kiddos thought they were fantastic...my husband and I agreed it was a little over the top.
I don't always want to try again when I've messed something up! But, I have to give these another try without so much sugar is going to happen. Some times we make mistakes. I must say that the cinnamon syrup that was also included in the recipe was fantastic! ;-)
